6 tablespoons taco seasoning (homemade is always better)
2 ½ Boneless American leg of lamb (mine was about 2.5 lbs)
1 mango, diced
½ red onion, diced
½ container cherry tomatoes, diced
1 jalapeno, diced
1 cup cilantro (divided in half)
1 cup plain Greek yogurt
Preheat your oven to 450 degrees. Rub the taco seasoning on the lamb until covered.
Once the oven is heated, roast the lamb (uncovered) for 15 minutes and then lower the temp to 325 degrees.
Cook the lamb for approximately 30 minutes per pound until internal temp of the lamb reaches 160 degrees (for medium).
While the lamb is cooking, make the cilantro lime sauce by combining juice from 1 lime, ½ cup cilantro, and a pinch of salt and Greek yogurt in a food processor. Pulse until the sauce is smooth and the cilantro is chopped evenly. Refrigerate until ready to serve.
Next make the mango salsa by combining the mango, onion, tomato, ½ cup of cilantro, juice from 1 lime and a few pinches of salt in a bowl. Stir until everything is evenly coated with the salt and lime juice and set aside until ready to serve.
Once your lamb is done roasting let it sit (covered in aluminum foil) for about 15 minutes
Slice the lamb thinly and begin building your tacos
All you need is a few pieces of lamb, some mango salsa and a drizzle of cilantro lime sauce and you have yourself the perfect taco!
