Grilled Lamb Rib Eye with Raspberry Goat Cheese Flan

Ingredients

Lamb

2 tablespoons olive oil
2 American Lamb rib eyes (lamb loins)
Salt
Pepper
Game rub

Raspberry Goat Cheese Flan

2 teaspoons water
1 cup fresh raspberries
1/2 cup granulated sugar
2 cups heavy cream
4 roasted garlic cloves, finely chopped
1/2 teaspoon game rub
4 egg yolks
3 ounces goat cheese

Directions

Lamb

In a medium-hot pan, add oil. Season lamb well with salt, pepper and game rub. Sear well on all sides; bake at 375ºF for 10 minutes until medium-rare. Cover and let stand for 5 minutes.

Raspberry Goat Cheese Flan

Place water, berries and sugar in sauce pot and let simmer until it starts to caramelize. Let it go for 5 minutes. Scoop mixture into ceramic 3-ounce baking dishes – enough to cover the bottom and 2 or 3 berries in each one. Bring cream, garlic and game rub to a boil then turn off. In a separate bowl, mix yolks and cheese. Temper in liquid; pour liquid into dishes. Place dishes in a water bath and bake at 350ºF for 40 minutes.
To serve, slice rib eye and serve with Raspberry Goat Cheese Flan.
